French Vinaigrette Salad

Whisk vinegar, shallot and mustard together in a small glass bowl. Slowly drizzle in the oil, whisking constantly. Add salt and pepper to taste. Allow to sit at room temperature for 30 minutes. Toss with mixed lettuce and serve.

Jake's Diner Pot Roast

1 | 10.5 oz can | beef consommé |
3 | medium | bay leaves, whole dried |
4 | oz | mushrooms, whole |
2 | Tb | cornstarch |

Sprinkle salt and pepper evenly over both sides of the chuck roast. Heat oil in an oven-proof roasting pan on top of stove and brown roast of both sides. Add garlic and onions, cut side down into the pan. Pour beer and consommé over the roast, add bay leaves and cook at 350 ° for 21/2 hours. Add mushrooms and cook for 1/2 hour more. Make s slurry with the cornstarch and water. Remove meat and vegetables to a platter. Add slurry to the pan juices and cook on top of stove on medium until the gravy thickens. Slice meat and pour some gravy over the meat and serve with extra gravy on the side. Adjust salt and pepper to taste.
Serve with potatoes and carrots.
Note: The secret to a great pot roast is to cook it 30 – 40 minutes beyond what you think you should, this will make it really tender.
Dad's Mashed Potatoes

Peel potatoes, cook in large pot with salted water to cover until fork tender. Remove, drain and place in large bowl. Cut butter into small pieces. Add butter and sour cream to bowl. Using an electric mixture, mix until all lumps and gone. Salt and pepper to taste.
Note: Never use a food processor for potatoes, as they will turn to glue in the processor

Place carrots in a microwavable dish, heat on high for 4 minutes. Stir and heat an additional 3-4 minutes. Add salt and pepper to taste.

Combine the sliced peaches and white sugar in large saucepan and mix gently. Add cornstarch, brown sugar, and water. Cook and stir over medium heat until thick. Add butter and lemon juice. Pour into a greased 12 by 7 inch baking dish. Set aside while you prepare the crust.
Preheat oven to 350 degrees. Sift the dry ingredients into large mixer bowl. Add the milk and softened butter all at once and beat just until smooth. Drop the batter by heaping tablespoons over the peach mixture and bake for 30 minutes. Serve with gingered maple cream
For Gingered Maple Cream: Combine cream, maple syrup, corn syrup, ginger, and dash of salt. Simmer for about 20 minutes or until thickened and reduced. Chill
