2largecucumbers, sliced
1.5cupsugar, granulated
1.5cupvinegar, cider
2Tbonions, sliced
1pinchsalt and pepper to taste
 

Cut cucumbers into thin slices. Dissolve sugar in vinegar on low heat. Thinly slice red onion. Add cucumbers, onions and liquid in a bowl and let marinate for 1 hour. Salt and Pepper to taste.

Place wok on stove with about 1 inch of water in bottom. Place small rack over water. Salt and Pepper salmon. Place salmon on the rack, cover and simmer for 3-4 minutes. Remove and serve with lemon wedges.

3clovesgarlic, chopped
3ozonions, diced
3ozham, shaved
1pinchsalt and pepper to taste
0.25cupcheese, Romano, grated
 

Wash spinach thoroughly and dry, heat oil in pan, add garlic and onions. Cook until onions are translucent. Add ham and spinach, season with salt and pepper. Plate and sprinkle with romano cheese.

White Rice
