Mushroom Soup

1.5 | lb | mushrooms, sliced |
3 | oz | mushrooms, dried black chantrelle |
0.5 | medium | onions, sliced |
1 | Tb | lemon, juice of |
4 | cup | chicken broth |
0.5 | cup | flour, all-purpose |
4 | Tb | butter, salted |
1 | cup | cream, heavy |
1 | pinch | salt and pepper to taste |

Bring mushrooms, broth , onion and lemon juice to a boil. Reduce heat and simmer for 20 minutes. Place butter in frying pan, melt. Add flour and cook slightly to form a roux. Add heavy cream. Stir, cook for another 5 minutes. Add mixture to soup. Simmer for 5 minutes. Serve

1 | cup | corn meal, yellow |
1 | tsp | xanthan gum |
0.33 | cup | sugar, granulated |
1 | Tb | baking powder |
0.33 | tsp | salt, kosher |
8 | oz | cream, whipping |
0.25 | cup | oil, vegetable |
3 | large | egg |
0.25 | cup | honey |

Heat oven to 400 degrees
Stir all dry ingredients then add the remaining ingredients
Pour onto a greased 9-inch pan
Bake for 20-25 minutes. ( for best results use a cast iron frying pan. Place in oven 10 minutes prior to baking, add 1 Tb of butter to pan then add the batter)
My wife has a sweet tooth; she recommends doubling the honey if you are making the cornbread for breakfast.
Pecan Bars

14 | oz | milk, evaporated |
1 | tsp | vanilla |
1 | cup | heathbar bits |
1 | cup | pecans, halved |

Preheat oven to 350-degrees. Combine flour and sugar in bowl. Cut in butter until a coarse crumb.
Press dough into bottom of a lightly greased 13 X 9 pan. Bake for 15 minutes. Mix egg, milk and vanilla, stir in heathbar bits and pecans. Spread mixture over crust. Bake an additional 25 minutes.
Cool and cut into bars.
