0.5cuptomatoes, cherry
1smallcucumbers, sliced
1Tbonions, chopped
2ozcheese, Romano
1smallcelery ribs
3Tbcheese, Romano, grated
0.25cupmushrooms, sliced
0.125cupolives, green
2ozsalami
3Tboil, olive
0.5tsporegano, dried
3Tbvinegar, red wine
1tspgarlic powder
1pinchsalt and pepper to taste
 

Chop all ingredients into bite size pieces. Place in a large bowl. Add olive oil, vinegar, garlic powder and oregano and mix. Add grated romano and mix again. Serve

Angel Hair Pasta with Garlic Shrimp

2Tboil, olive
2Tblemon zest, finely chopped
4mediumscallions, sliced
3clovesgarlic, minced
1lbshrimp, deveined, shelled
1mediumlemon, juice of
0.75cuptomatoes, diced
0.25cupmilk, 2 %
1lbpasta, angel hair
4Tbcheese, Romano, grated
1Tbparsley, flakes
0.5tsppepper, fresh ground
1pinchsalt to taste
 

Heat oil in pan; add 1/2 the zest, all the scallions, garlic, and shrimp. Reduce heat and simmer until shrimp are done,( about 3-4 minutes) add lemon juice, tomato, and milk. Simmer 3 more minutes. Cook pasta in boiling water with 2 Tb salt. Add pasta to pan, mix well, plate. Sprinkle top with parsley flakes, black pepper, remaining lemon zest and romano.

Serve with garlic bread.

If your pasta is too dry add a little of the pasta water.

Peach Melba Sorbet

0.75cuporange juice
0.5cupsugar, granulated
6Tbraspberry preserves
6ozChambord Liqueur
 

Heat orange juice and sugar until sugar is melted, cool. Place frozen peaches in food processor, add cooled juice and process until smooth and semi-frozen. Scoop into martini glasses, top with raspberry preserves and add the Chambord.

May be frozen in airtight container. Thaw briefly in microwave for 30 seconds before using.
