Butternut Squash Sticks

Cut squash in half, peel and roast in 350-degree oven until lightly brown (18 - 25 minutes). Cut roasted squash in ½ “X ½” X 2”sticks. Place eggs in a dish, salt and pepper to taste, place flour in separate dish, salt and pepper to taste, place Panko in another dish, salt and pepper to taste. Roll sticks in rice flour, then in egg then in Panko. Place on a cookie sheet covered with parchment paper. Bake at 400 degrees for about 8-10 minutes, until golden.

Beat egg with cream. Melt butter. Pour both over cooked, drained, hot fettuccine, add grated cheese. Toss and serve.

0.5 | cup | breadcrumbs |
4 | medium | salmon, fillets, skinned |
0.5 | cup | yogurt, non-fat plain |
1 | pinch | salt and pepper to taste |

Put breadcrumbs, tomatoes, garlic, cheese and zest in food processor, process until smooth. Spread yogurt on filets, cover both sides with breadcrumbs. Place on parchment paper on cookie sheet in preheated 350-degree oven. Bake for 10 –15 minutes, until done.
