Grilled Ribeyes

Let steaks sit at room temperature for one half hour. Season with salt and pepper; drizzle olive oil over steaks. Grill over medium high heat- turn only once and cook to 120 degrees for rare, about 9 minutes. A good rule of thumb is to grill 1 minute per side for each 1/4 of thickness. So a 1 inch steak would take 4 minutes per side. Allow steaks to rest for 10 minutes after removing from the grill.

Combine 1 cup flour, salt and pepper, buttermilk and beer in a bowl. Let stand for 20 minutes. Place 3/4 cup flour in a large bowl, cut onions in 1/4 slices and separate. Heat oil (about 4 cups) in a heavy pan to about 375 degrees. (test oil by dropping a very small bead of batter into it and it if immediately browns the oil is hot enough.) Drop onion rings into flour, coat completely, shaking off excess. Dip the floured rings into the batter, shake off excess and gently place in oil. Turn over when lightly browned. Remove rings to a cookie sheet covered with paper towels. Drain excess oil. rings may be reheated in a low oven before serving.

Chop all ingredients into bite size pieces. Place in a large bowl. Add olive oil, vinegar, garlic powder and oregano and mix. Add grated romano and mix again. Serve

Have everything at room temperature. Mix together until very smooth. Pour into springform pan, place in a pre-heated water bath, 1/3 way up, and bake at 350 degrees for 45 minutes to 1 hour, until the top is light brown and even across the top. This is best if made the day before and refrigerated over night.

Add any topping you wish.
