Chop onion and green pepper; add oil to pan and sauté until lightly browned. Add garlic and diced tomatoes and cook for 4 minutes. Add salt and pepper and remove from heat. In a large bowl mix beef, pork and veal together. Add breadcrumbs, mix egg and milk together and add to meat. Add cilantro and half the onion mixture. Mix together and form into a loaf. Place in a baking pan, top with remaining onion mixture and sliced bacon. Bake at 350 degrees for 1 –1¼ hours, until firm. Remove from pan, allow to rest and then slice.

Dad's Mashed Potatoes

Peel potatoes, cook in large pot with salted water to cover until fork tender. Remove, drain and place in large bowl. Cut butter into small pieces. Add butter and sour cream to bowl. Using an electric mixture, mix until all lumps and gone. Salt and pepper to taste.


Note: Never use a food processor for potatoes, as they will turn to glue in the processor

Green Bean Bundles

Roll six or seven whole green bean in bacon strips (cut in half) to make bundles. Place in 9 by 13 pan. Heat remaining ingredients in saucepan until butter is melted. Pour over bundles. Bake covered in 350-degree oven for 30 minutes- then uncover and bake 15 more minutes.

Diner Rice Pudding

Combine water and rice in a heavy, medium saucepan. Bring to a boil, reduce heat to medium-low and simmer, covered, until the rice is tender and the liquid is absorbed, about 15 minutes. Uncover rice and let cool.
Preheat oven to 350 degrees.
Butter 1 large (6 to 8-cup) soufflé dish with the tablespoon of butter.
In a large bowl, whisk together the milk, brown sugar, eggs, egg yolk, salt and cinnamon. Stir in the raisins and let sit while rice is cooling. Add mixture to the rice, mix and pour into the buttered dish. Place the dish in a large roasting pan. Add enough hot water to the roasting pan to come halfway up the sides of the dish. Bake until the pudding is set in center and brown around edges, about 1 hour and 5 minutes. Remove the dish from the water and cool at least 15 minutes before serving.
Serve warm with whipped cream, if desired.
