0.5 | cup | breadcrumbs |
4 | medium | salmon, fillets, skinned |
0.5 | cup | yogurt, non-fat plain |
1 | pinch | salt and pepper to taste |

Put breadcrumbs, tomatoes, garlic, cheese and zest in food processor, process until smooth. Spread yogurt on filets, cover both sides with breadcrumbs. Place on parchment paper on cookie sheet in preheated 350-degree oven. Bake for 10 –15 minutes, until done.

2.5 | cup | cheese, Gruyere |

Preheat oven to 350-degrees. Spray the inside of a 10 X 15 X 2” baking pan with PAM.
Remove stalks from fennel bulbs and cut bulbs in half lengthwise. Remove cores and slice bulb thinly crosswise. Sauté fennel and onions in olive oil and butter on medium heat until tender. Peel potatoes, slice thinly. Mix potatoes in a bowl with heavy cream, cheese, reserving ½ cup. Salt and pepper to taste. Add sautéed fennel and onions, mix well. Pour mixture in and press down. Sprinkle reserved cheese on top.
Bake for 11/2 hours until brown and tender.

Preheat oven to 375 degrees; bake tarts shells in 41/2 tart pans for 8-10 minutes. Cool tart shells. Fill with chocolate ganache; arrange raspberries on top and sprinkle with powder sugar.
To maintain the shine of the tarts don't refrigerate before serving.
