Lemoncello Shrimp

Heat olive oil in a pan, add shrimp and sauté for 2 minutes. Add garlic, sauté for 2 minutes more. Add a pinch of salt and Lemoncillo Liqueur. Use caution as the alcohol may ignite. Flip shrimp, cook 1 minute more and plate.

Southwest Chicken

Cut chicken along backbone, flatten, remove backbone, cut a hole in skin between thigh and side and push the leg through to hold in place. Fold wings back to hold in. Cover chicken with cinnamon and chili powder. Rub olive oil over the top of the chicken. Let the chicken marinate for about one hour. Place mushrooms, onions, garlic, tomatoes, sunflower seeds and chili peppers in bottom of roasting pan. Preheat oven to 450 degrees, place chicken breast side up in roasting pan. Cook for 1 hour to 11/4 hours.
Remove chicken from pan and let it rest. Remove solid vegetables from pan, place in blender or food processor and carefully (they will be hot) liquefy until it makes a chunky sauce, add this back to juices in pan, add chicken broth to pan, thicken sauce with flour mixed with some of the pan juices, adjust salt and pepper to taste, add raisins. Carve chicken, pour gravy over chicken and serve extra gravy alongside.

Garlic Mashed Sweet Potatoes

Peel sweet potatoes, cook in a large pot of salted water (2 Tb) until fork tender. Melt butter in a small sauté pan, add garlic briefly, and cook until in just starts to change color. *
Drain potatoes, place in mixing bowl, and add garlic, butter and sour cream. Mix using an electric mixer until there no lumps. Salt and pepper to taste.

Note: Don't overcook the garlic, as it will become bitter.

Note: Never use a food processor for potatoes, as they will become glue in the processor.

Chop all ingredients into bite size pieces. Place in a large bowl. Add olive oil, vinegar, garlic powder and oregano and mix. Add grated romano and mix again. Serve

Bread - Honey Moist Cornbread

Heat oven to 400 degrees
Stir all dry ingredients then add the remaining ingredients
Pour onto a greased 9-inch pan
Bake for 20-25 minutes. ( for best results use a cast iron frying pan. Place in oven 10 minutes prior to baking, add 1 Tb of butter to pan then add the batter)

My wife has a sweet tooth; she recommends doubling the honey if you are making the cornbread for breakfast.

Lemon Meringue Tart

Place lemon zest and sugar in a bowl, mix together. Cut butter into 12 pieces. Place lemon juice, sugar, butter, and all the eggs into a non-reactive sauce pan. Whisk together. Set pan over medium heat and stir until thick and hot to the touch. Remove from heat, strain into bowl and refrigerate for 1/2 hour.

Use pre-baked tart shell, fill with lemon filling. Spoon Italian meringue on top, smooth, then lift your spatula to form peaks. Place in broiler for only 2 minutes to color. (Watch this step, the meringue browns very quickly. Refrigerate until served.
