1cupgluten-free flour
1cupcorn meal, yellow
1tspxanthan gum
0.33cupsugar, granulated
1Tbbaking powder
0.33tspsalt, kosher
8ozcream, whipping
0.25cupoil, vegetable
3largeegg
0.25cuphoney
 

Heat oven to 400 degrees
Stir all dry ingredients then add the remaining ingredients
Pour onto a greased 9-inch pan
Bake for 20-25 minutes. ( for best results use a cast iron frying pan. Place in oven 10 minutes prior to baking, add 1 Tb of butter to pan then add the batter)

My wife has a sweet tooth; she recommends doubling the honey if you are making the cornbread for breakfast.

Winter Squash Soup

2Tboil, olive
2Tbbutter, salted
1mediumonions, chopped
48ozchicken broth
1Tbcloves, ground
1Tbginger, ground
1Tbpepper, fresh ground
3Tbcilantro, chopped
8ozpears, canned in lite syrup
8ozcream, half and half
1pinchsalt to taste
 

Peel and seed the squash. Cut into 1 inch cubes. Heat butter and olive oil in a pan. Sauté squash until tender; add onion. Cook for 3 minutes more until onion is tender. Add broth, cilantro, pears with juice, spices and simmer for 20 minutes. Place 3 ladles at a time in a blender and blend until smooth. (Caution: don’t fill blender more than half full as soup will rapidly expand) Repeat until all is blended. Return to pan and add half and half. Add salt to taste.

Optional: serve with a Tb of sour cream in center.
