1 | small | celery ribs |
3 | Tb | cheese, Romano, grated |
0.25 | cup | mushrooms, sliced |
0.125 | cup | olives, green |
2 | oz | salami |
3 | Tb | oil, olive |
0.5 | tsp | oregano, dried |
3 | Tb | vinegar, red wine |
1 | tsp | garlic powder |
1 | pinch | salt and pepper to taste |

Chop all ingredients into bite size pieces. Place in a large bowl. Add olive oil, vinegar, garlic powder and oregano and mix. Add grated romano and mix again. Serve

0.5 | cup | mushrooms, sliced |
2.5 | cups | chicken broth |
0.5 | cup | cheese, Romano, grated |
0.25 | cup | cheese, Romano |
1 | Tb | parsley, flat leaf, chopped |
1 | pinch | salt and pepper to taste |

Place dried mushrooms into � microwavable cup with white wine. Soak until softened. (30 seconds to 1 minute). Heat olive oil in a pot with 2/3rds of the butter. Add onions, wild mushrooms and mushrooms, sweat over medium heat until softened. Add rice to pot, stirring until rice is translucent.. Lower heat; add broth � cups at a time, stirring constantly. Add remaining butter and grated Romano cheese. Spoon risotto onto plates, shave remaining Romano cheese with a vegetable peeler over risotto and sprinkle with chopped parsley. Add salt and pepper to taste.

Place ice cream in large wine glasses. Pour bourbon on top and sprinkle with ground chocolate. (not cocoa)
For ground chocolate use a rasp to finely grate a dark chocolate candy bar.
