Marinated Lamb

0.5tsprosemary, dried

2Tboil, olive
1ozbrandy
2Tbbutter, salted
 

Put lemon, garlic, mustard, herbs, and pepper in zip-lock baggie. Cut lamb into 1/2 thick slices, pound to tenderize. Place in marinade for 2-4 hours in refrigerator. Heat olive oil in pan, brown lamb in pan. Add remaining marinade and simmer for 10 minutes. Remove lamb to platter. Add brandy and butter, swirl and pour over lamb.

Fettuccine Alfredo

Beat egg with cream. Melt butter. Pour both over cooked, drained, hot fettuccine, add cheese. Toss and serve. Option: add golden raisins.

Poached Pears with Blue Cheese Fondant

Prepare pears using poached pear recipe. Reduce cooking juices to a thick syrup. Let cheese sit at room temperature. Place 1 Tb of blue cheese in the center of each pear. Drizzle pear syrup over pears. Sprinkle pistachios and pepper around pears.
