Raspberry Tea

Bring water to a boil, remove from heat, add tea bags and allow to steep (sit) for 5 minutes. Remove tea bags and add jam. Cool, serve in a tall glass with ice.

Note: For a more pronounced raspberry taste add more jam.

Watermelon Salad

0.33cupcilantro, chopped
0.25cupoil, olive
2Tblemon, juice of
0.5tsppepper, fresh cracked
1pinchsalt to taste
 

Toast pine nuts, Seed and cut watermelon into bite size pieces. Thinly slice onion, crumble feta and place in bowl with all other ingredients. Mix well, serve very cold.

Optional: Add some chopped mint.

0.25cupcranberries, dried
0.25cuppecans, halved
1pinchdill weed
0.25cuptomatoes, cherry
1pinchsalt and pepper to taste
 

Cook chicken breasts in microwave until done. Reserve cooking fluids. Lightly toast pecans. Cut chicken into bite size pieces, add reserved juices and all other ingredients and mix well.

Serve on bed of spinach or lettuce

Mimi's Almost Legendary Molasses Cookies

0.75cupshortening, vegetable
1.5cupsugar, granulated
0.25cupmolasses
1largeegg
2cupflour, all-purpose
0.5tspginger, ground
1tspcinnamon. ground
0.5tspsalt, table
 

Melt shortening in saucepan over low heat. Remove from heat. Cool and add 1-cup sugar, molasses, and egg. Mix well. Sift together flour, baking soda, ginger, cinnamon, and salt. Stir into molasses mixture and mix well. Chill for at least one hour. Roll dough into 1 inch balls and roll in remaining sugar. Place 2 inches apart on greased cookie sheets. Bake at 375 for 8-10 minutes.

Hint: My Mom has made these cookies for years- they are a favorite of all the kids and were my Dad's favorite cookie. I hope your family will love them as well.
