1pinchsalt and pepper to taste
 

Heat oven to 400 degrees, cover cookie sheet with parchment paper, peel squash, place squash in large bowl, toss in olive oil, salt and pepper to taste.

Place on cookie sheet in oven, cook until just barely fork tender, remove and cool

Each serving has 159 calories, 20g carbs, 7.3g fat, 3.3g protein and 3.4g fiber

1Tboil, olive
1pinchsalt and pepper to taste
1Tblemon, juice of
1Tbbutter, salted
 

Brush oil on both sides of the flounder, salt and pepper to taste. Preheat oven to 200 degrees. Heat grill pan on high heat until very hot. Brown flounder for 11/2 minutes per side. Remove from pan and place in ovenproof pan in oven for 5 -10 minutes, until flaky and translucent.

Remove from oven, plate and drizzle lemon on top. Place 1/2 Tb of the butter on each filet.
