10 | oz | tilapia, frozen filets |
1 | Tb | oil, olive |
1 | pinch | salt and pepper to taste |
4 | sheets | filo |

Place olive oil and butter in hot pan; add carrots, celery, peas, onions, ginger, vinegar, zest, and sesame oil and lemon juice. Sauté until just tender. Add white wine, pecans and filets, sauté 1 minute per side. Salt and pepper to taste. Place 1 sheet filo on work area, paint with olive oil, add second sheet, and paint again. Add fish and vegetable mixture with a little of the juices, fold over to make a bundle. Repeat with remaining filets. Place on parchment paper, folded side down, on cookie sheet and bake at 375 degrees for 15 minutes.

Cut tomatoes in thirds lengthwise, place on cookie sheet covered with parchment paper, sprinkle with sugar, salt and pepper, garlic and thyme. Sprinkle with a drop or two of olive oil. Bake at 250- degrees for 2 1/2 hours.
Note: may be re-heated prior to serving.
