Blue Cheese Stuffed Baby Portabellas

Remove stems from mushrooms, wipe with damp cloth to clean. Brush with oil, stuff with blue cheese, sprinkle with pepper. Place on baking sheet, bake at 325 degrees for 3-5 minutes until mushrooms are tender.
Chili-Cheese Potato Skins

Preheat oven to 400 degrees. Rub the potato skins with olive oil to lightly coat all over. Set the skins, cut sides up, on an aluminum foil lined baking sheet. Combine the chili powder, salt, and cayenne. Sprinkle lightly over the potato skins. Bake about 12 minutes, until crisp. Lay the cheese slices over the potato skins. Remove to the oven and bake until cheese is just melted, about 2 minutes.Serve hot.

Mix ground beef, crumbs and dry onion soup together. Shape into balls. Put in large casserole dish. Mix together remaining ingredients and pour over meatballs in casserole dish. Bake at 325 degrees for two hours.
Spinach in Puff Pastry

Preheat oven to 400 degrees. Each sheet should be tri-folded; you will need one full sheet. Let dough thaw slightly. Cut into 3 pieces, then in half again, score a rectangle on each piece approximately 1/2 “ from the sides. Place dough on cookie sheet, lined with parchment paper, in oven for 20 minutes (until golden). In a pan add oil, sauté spinach, onions and garlic for 5 minutes, and add mushrooms and lemon juice. Cook for 2 more minutes. Remove from oven, gently remove the rectangle top. Fill cavity with spinach mixture, sprinkle with romano and place in oven to melt romano (2 minutes). Lean pastry lid against side and serve.

Preheat oven to 375 degrees; bake tarts shells in 41/2 tart pans for 8-10 minutes. Cool tart shells. Fill with chocolate ganache; arrange raspberries on top and sprinkle with powder sugar.
To maintain the shine of the tarts don't refrigerate before serving.
