Rub beef roast with salt and pepper. Brown in vegetable oil and Drain. Combine remaining ingredients and pour over roast. Bake at 325 degrees for three hours.

0.25cupbutter, unsalted

Cut washed red potatoes into quarters- no need to peel but remove eyes. Cover them with cold water and 1-teaspoon salt in saucepan. Add 2 peeled garlic cloves to the potatoes and water. Boil covered, until tender, about 20 minutes. Drain and return to saucepan. Pour over half and half and melted butter- heat until warm and simmering, being careful not to burn. Mash potato mixture with mixer until smooth and add salt and pepper.

Beat egg yolks; add flour, sugar, salt, and a little pepper. Add corn and fold in stiffly beaten egg whites. Drop by spoonfuls onto greased frying pan or griddle. Cook until golden brown on both sides. Do not cook too fast.
