Mom's Best Meat Loaf

Preheat oven to 350 degrees. Combine beef with breadcrumbs, eggs, sour cream, and one half cup of chili sauce. Sauté onion in butter until soft and add to mixture. Mix in salt and pepper and from into a loaf shape in greased 9 by 13 baking dish. Mix remaining chili sauce with brown sugar and spread over meat loaf. Cover top with bacon slices. Bake in a 350-degree oven for one hour or until juices run clear.

Peel and boil potatoes, drain. Combine all ingredients except butter and almonds and mash until smooth. Place in a 9 by 13 casserole dish. Pour melted butter over top and sprinkle with almonds. Make at 375 degrees for 30 minutes.

Hint: May be refrigerated and baked the next day - bring to room temperature then bake at 350 for 45 minutes.

Buttermilk Biscuits

Mix together flour, sugar, salt, baking powder, and baking soda. Gradually cut in cold butter with a pastry blender or two knives. When mixture is the consistency of cornmeal, stir in buttermilk. Toss lightly until mixture holds together. Pat out on floured counter and cut into rounds. Bake on ungreased cookie sheet at 375 degrees 18 to 20 minutes, or until lightly browned.

Hint: The secret to light and fluffy biscuits is to handle the dough as little as possible

Green Bean Almondine

Wash fresh green beans and remove ends. Leave beans whole and put in saucepan with water, butter, and salt. Cover and cook on low heat for 20 to 25 minutes or until beans are tender. Toast almonds in a skillet over low heat until golden brown- be careful not to burn! Remove beans to bowl and sprinkle almonds over.

Blueberry Pie

Preheat oven to 450 degrees. Prepare one recipe Never Fail Pie Dough or use premade piecrust dough. Roll out bottom crust on floured board and put in 9-inch pie pan. Mix berries, sugar, cornstarch, melted butter, lemon juice, and salt together. Let sit for ten minutes then pour into bottom crust. Roll out top crust and make three or four slits in crust to vent. Put over top crust and crimp edges. Place on cookie sheet to catch drips and bake at 450 for ten minutes. Reduce heat to 350 and bake 50 minutes more. If edges of crust start to brown too much, fold thin strips of foil over the edges to protect it.
