Fingerling Potato and Green Bean Salad

Scrub fingerling potatoes to remove all dirt. Boil in salted water until tender, drain and cool. Cook trimmed fresh green beans in salted water 3- 5 minutes until crisp tender then drain. Whisk together lemon zest, olive oil, salt, pepper and chopped fresh parsley. Toss together with potatoes and beans. Serve at room temperature or cold.

Hint: You may also add any chopped herbs you desire, such as rosemary, thyme, tarragon, etc;

Pork Tenderloins and Stuffing

Bring butter and 1/3-cup cider to boil over medium heat. Remove from heat and stir in stuffing mix. Add the chopped apples, minced onion, and minced celery; mix well and set aside. Rinse each tenderloin and pat dry with paper towels. Slice each tenderloin lengthwise to a depth that allows you to flatten it; sprinkle with salt and pepper. Flatten one tenderloin so that the cut side is up and cover with stuffing mixture; press the other tenderloin on top, cut side down to make a sandwich. Tie the pork tenderloins together with butcher's twine, keeping the meat as flat as possible. Place in a shallow roasting pan, pour remaining cider on top. Arrange bacon slices evenly on meat. Bake at 350 degrees for 1 1/2 hours, basting occasionally with cider until meat is browned. Discard the bacon before serving.

Bread - Honey Moist Cornbread

0.33cupsugar, granulated

Heat oven to 400 degrees
Stir all dry ingredients then add the remaining ingredients
Pour onto a greased 9-inch pan
Bake for 20-25 minutes. ( for best results use a cast iron frying pan. Place in oven 10 minutes prior to baking, add 1 Tb of butter to pan then add the batter)

My wife has a sweet tooth; she recommends doubling the honey if you are making the cornbread for breakfast.

Peach Cobbler with Gingered Maple Cream

0.33cupmaple syrup
3Tbcorn syrup, light

Combine the sliced peaches and white sugar in large saucepan and mix gently. Add cornstarch, brown sugar, and water. Cook and stir over medium heat until thick. Add butter and lemon juice. Pour into a greased 12 by 7 inch baking dish. Set aside while you prepare the crust.
Preheat oven to 350 degrees. Sift the dry ingredients into large mixer bowl. Add the milk and softened butter all at once and beat just until smooth. Drop the batter by heaping tablespoons over the peach mixture and bake for 30 minutes. Serve with gingered maple cream

For Gingered Maple Cream: Combine cream, maple syrup, corn syrup, ginger, and dash of salt. Simmer for about 20 minutes or until thickened and reduced. Chill
