Vodka Dipping Sauce

Mix all ingredients together and refrigerate at least three hours or overnight. Serve with crab claws or shrimp.

Glazed Brie

Mix together sugar, chopped pecans, and brandy. Chill up to one week. Place whole round of Brie cheese onto 9-inch pie plate. Bake at 450 degrees for 5 minutes or until slightly softened. Sprinkle sugar mixture on top. Bake two to three minutes until sugar is melted and cheese is heated through, but not melted. Serve with apple or pear wedges, grapes, and crackers.

Layered Spinach Salad

Combine 1/2 cup Romano cheese and crumbled fried bacon. Layer in large bowl spinach, cheese mixture, mushrooms, onion slices, and peas. Combine mayonnaise, sour cream, and sugar. Mix well and spread over salad to seal top. Sprinkle 2 tablespoons of Romano cheese over top. Refrigerate overnight, covered. Toss just before serving.

Peel and boil potatoes, drain. Combine all ingredients except butter and almonds and mash until smooth. Place in a 9 by 13 casserole dish. Pour melted butter over top and sprinkle with almonds. Make at 375 degrees for 30 minutes.

Hint: May be refrigerated and baked the next day - bring to room temperature then bake at 350 for 45 minutes.

One day ahead: Mix two cloves garlic, Nature's Seasonings, and pepper and rub both sides of steaks. In a large heavy skillet melt 2 Tablespoons butter and sauté steaks on both sides over high heat until brown on both sides. Do not crowd in skillet, add more butter if needed. Put steaks in a 9 by 13 baking dish leaving 1/2 inch between steaks. Add brandy to frying pan and stir well to scrape browned bits left in pan. Add 3 Tablespoons butter. When foamy reduce heat and whisk in flour. Whisk constantly until golden brown. Add crushed garlic clove and tomato paste, stir in wine, chicken, and beef broth. Bring to a boil over moderate heat, stirring constantly for ten minutes. Add Worcestershire sauce, jelly, and mushrooms, stirring to coat with sauce. Taste to adjust seasonings. Pour cooled sauce over steaks until the sauce is halfway up the pan. Cover dish with plastic wrap and refrigerate overnight. Reserve and refrigerate any remaining sauce.
Next day: Two hours before serving, remove from refrigerator so steaks will return to room temperature. Preheat oven to 400 degrees. Put uncovered baking dish in oven and bake 25 minutes for medium well done. Serve meat, spooning mushrooms and sauce over steak

Hint: Recipe may be doubled for a large dinner party

Chocolate Truffle Cakes

Preheat oven to 375 degrees. Generously butter a standard 6-cup muffin tin. Dust with flour, tapping out excess and set aside. Put chocolate, butter, and 1 tablespoon sugar in a medium heatproof bowl set over a pan of simmering water; whisk occasionally until smooth. Remove from heat, and let stand until cool and thickened, 3 to 5 minutes. Process eggs and remaining tablespoon sugar in a food processor until pale and doubled in volume, about 2 minutes. Sift flour and salt into egg mixture. Pulse each addition until combined, about 10 times. (Batter will be thick). Spoon mixture into the prepared muffin tins, filling cups three-quarters full; swirl tops with back of spoon. Bake until tops are springy to the touch, 18 to 20 minutes. Immediately turn our onto wire racks; reinvert, and let cool.

Hint: Bake while lunching, then serve warm with vanilla ice cream and berries. Shown here with strawberry sorbet
