Cranberry Cream Scones

Sift together flour, baking powder, sugar, and salt. Add cold butter, cut into small pieces, and blend until mixture resembles cornmeal. Mix together two lightly beaten eggs and cream. Mix with dried cranberries into flour mixture. Do not over mix- mix just until it forms dough. Pat out dough onto floured surface, about 3/4 thick, and cut with a 2 inch round cutter. Brush tops of scones with an egg wash of 1 egg lightly beaten with 1/3-cup milk. Sprinkle finishing sugar on top. Bake on an ungreased cookie sheet at 450 degrees for about 15 minutes or until tops are lightly browned.

Mix together mayonnaise and raspberry jam. Set aside. Remove crusts and cut bread into squares. Spread a thin layer of raspberry mayonnaise on 8 bread slices. Top with shaved smoked turkey and top with another bread slice. Refrigerate until serving time, covered with damp paper towels.
Asparagus Tea Sandwiches

Mix together mayonnaise, lemon zest, lemon juice, and lemon pepper. Set aside. Cut wheat bread into circles or squares. Spread a layer of lemon mayonnaise then top with fresh asparagus spears, which have been lightly steamed. Place on cookie sheet and cover with damp paper towels and refrigerate until serving time. The damp towels will keep the sandwiches fresh.

Melt shortening in saucepan over low heat. Remove from heat. Cool and add 1-cup sugar, molasses, and egg. Mix well. Sift together flour, baking soda, ginger, cinnamon, and salt. Stir into molasses mixture and mix well. Chill for at least one hour. Roll dough into 1 inch balls and roll in remaining sugar. Place 2 inches apart on greased cookie sheets. Bake at 375 for 8-10 minutes.
Hint: My Mom has made these cookies for years- they are a favorite of all the kids and were my Dad's favorite cookie. I hope your family will love them as well.
