wash and cut broccoli into bite sized pieces. Combine broccoli, crisply cooked crumbled bacon, raisins, and chopped onion in a large bowl. In a separate bowl mix mayonnaise, sugar, and vinegar. Pour dressing over salad and toss. Refrigerate at least two hours before serving
Flounder Filets

1 | lb | flounder filet |
1 | Tb | oil, olive |
1 | pinch | salt and pepper to taste |
1 | Tb | lemon, juice of |
1 | Tb | butter, salted |

Brush oil on both sides of the flounder, salt and pepper to taste. Preheat oven to 200 degrees. Heat grill pan on high heat until very hot. Brown flounder for 11/2 minutes per side. Remove from pan and place in ovenproof pan in oven for 5 -10 minutes, until flaky and translucent.
Remove from oven, plate and drizzle lemon on top. Place 1/2 Tb of the butter on each filet.

Peel, core, and slice whole pineapple. Melt butter in small saucepan and add brown sugar. Cook over low heat fro two minutes. Remove from heat and add vanilla and rum. Let pineapple slices marinate in brown sugar mixture for an hour, remove and grill over medium heat until grill marks show on both sides and pineapple is soft, but not mushy. Serve with vanilla ice cream or coconut sorbet.
