1 | cup | gluten-free flour |
1 | cup | corn meal, yellow |
1 | tsp | xanthan gum |
0.33 | cup | sugar, granulated |
1 | Tb | baking powder |
0.33 | tsp | salt, kosher |
8 | oz | cream, whipping |
0.25 | cup | oil, vegetable |
3 | large | egg |
0.25 | cup | honey |

Heat oven to 400 degrees
Stir all dry ingredients then add the remaining ingredients
Pour onto a greased 9-inch pan
Bake for 20-25 minutes. ( for best results use a cast iron frying pan. Place in oven 10 minutes prior to baking, add 1 Tb of butter to pan then add the batter)
My wife has a sweet tooth; she recommends doubling the honey if you are making the cornbread for breakfast.

1 | medium | onions, diced |
3 | cloves | garlic, minced |
1 | whole | pepper, red |
1 | 6 oz can | chilis, chopped green |
1 | 15 oz can | tomatoes, whole |
1.5 | Tb | tomato, paste |
3 | Tb | chili powder |
1 | tsp | oregano, dried |
1 | cup | chicken broth |
1 | 15 oz can | beans, black |
2 | Tb | cornmeal, course ground |
0.25 | tsp | salt, table |

Saute boneless, skinless, chicken cubes, diced onions and minced garlic in vegetable oil in large heavy stockpot. Add the remaining ingredients with the exception of the cornmeal and bring to a simmer. Gradually whisk in cornmeal and cook uncovered for 30 minutes.
Hint: Great served with sour cream, shredded cheddar cheese and chopped green onions.
Grilled Pineapple Slices

3 | Tb | sugar, brown |
3 | Tb | butter, salted |
0.25 | cup | rum |
1 | tsp | vanilla |

Peel, core, and slice whole pineapple. Melt butter in small saucepan and add brown sugar. Cook over low heat fro two minutes. Remove from heat and add vanilla and rum. Let pineapple slices marinate in brown sugar mixture for an hour, remove and grill over medium heat until grill marks show on both sides and pineapple is soft, but not mushy. Serve with vanilla ice cream or coconut sorbet.
