4 | Tb | butter, salted |
2 | Tb | flour, all-purpose |
2 | 6 oz can | milk, evaporated |
0.5 | cup | chicken broth |
4 | medium | chicken breasts, boneless, skinless |
1 | 6 oz can | mushroom, canned |
0.33 | cup | pepper, green |
0.25 | cup | pimento |
0.25 | cup | almonds, slivered |

Prepare rice according to directions and set aside. Melt butter in heavy saucepan over low heat. Add flour and stir until smooth. Cook 1 minute, stirring constantly. Gradually whisk in milk and broth and cook over medium heat, stirring constantly until thickened and bubbly. Combine in a large bowl, the sauce, rice, cooked and cubed chicken breasts, mushrooms, green pepper, and pimento. Put into a greased 9 by 13 baking dish. Cover and refrigerate until ready to bake- several hours or overnight. Bring to room temperature, and then bake at 350 degrees for 45 minutes.

Place carrots in a microwavable dish, heat on high for 4 minutes. Stir and heat an additional 3-4 minutes. Add salt and pepper to taste.
