Citrus Couscous Salad

0.5cupraisins, golden

1mediumcucumbers, sliced

0.5cupalmonds, slivered
0.25cupmint, fresh
0.25cuplemon, juice of
3Tboil, vegetable
 

Bring 1- 1/2 cups orange juice, water, and salt to boil in a medium saucepan; gradually stir in 1 box couscous. Remove from heat, cover and let stand 5 minutes. Fluff with a fork and put it in a large bowl. Combine 1/2 cup orange juice, sliced dried apricots, raisins, and vinegar in a small saucepan; bring to a boil. Remove from heat; let stand 15 minutes. Add apricot mixture, cucumbers and remaining ingredients to couscous, stirring to combine.

1cupsoda, lemon-lime
1cupoil, vegetable
1tspgarlic, minced
 

Mix oil, soy sauce, garlic, and soda in large Zip-lock plastic bag. Put chicken breasts in marinade and marinate for at least 3 hours. Remove from marinade and grill over medium heat for 15 minutes per side. Chicken is done when juices run clear.

Hint: You can use boneless skinless chicken breasts but you will need to lessen cooking time. Chicken is done when no longer pink in the center.
