3ozcheese, feta, crumbled
2Tbcheese, Romano, grated
0.25cupcranberries, dried
0.25cuppecans, halved
0.25cupmushrooms, sliced
1pinchsalt and pepper to taste
 

Lightly toast pecans. Place all ingredients in a large bowl and toss.

For sauce: Heat olive oil in large heavy saucepan. Sauté chopped onion and minced garlic in oil until soft. Add tomato sauce, tomato paste, brown sugar, parsley, bay leaf, oregano, salt, and pepper. Simmer, covered, over low heat fro 30 minutes. While sauce is simmering, brown ground beef in large skillet. Cook ziti according to directions on box and drain. Mix together 2 cups of sauce, browned beef, ziti, ricotta cheese, Parmesan cheese, 1 egg and 3/4 t. salt. Put mixture in large casserole dish; pour remaining sauce on top and sprinkle with 8 oz. shredded mozzarella. Bake for 30 minutes at 375 degrees


Hint: You may use 4 cups prepared spaghetti sauce instead of making your own

Preheat oven to 350 degrees. Combine beaten eggs, raisins, and vanilla and cover with plastic wrap. Let stand for one hour. Cream together room temperature butter and both sugars. Add flour, salt, cinnamon, and soda to sugar mixture and mix well. Blend in egg-raisin mixture and oatmeal. Dough will be stiff. Drop a heaping tablespoons onto ungreased cookie sheets and bake for 10 to 12 minutes or until lightly browned.

Delicious: Soaking of the raisins is the secret!
