2Tbbutter, salted
1pinchsalt and pepper to taste
 

Heat oil in a pan; dip tilapia in flour, shake off excess and pans sauté on each side for 3 minutes. Remove to a platter and swirl butter in pan, pour over tilapia and serve.

Dad's Mashed Potatoes

Peel potatoes, cook in large pot with salted water to cover until fork tender. Remove, drain and place in large bowl. Cut butter into small pieces. Add butter and sour cream to bowl. Using an electric mixture, mix until all lumps and gone. Salt and pepper to taste.


Note: Never use a food processor for potatoes, as they will turn to glue in the processor

Cut cherry tomatoes in half, place in a large bowl. Dice cucumber and asparagus into ½ inch dice; add to bowl. Add garlic, cilantro, feta, lemon juice and oil, toss to coat. Adjust salt and pepper to taste.
