Shape ground beef into patties, salt and pepper to taste. Mix sliced onions with barbeque sauce, set aside. Mix together Roquefort cheese, mayonnaise, red wine vinegar and hot pepper sauce to taste. Place onion slices on hot oiled grill. Grill 5 minutes on each side and remove. Grill beef patties until thoroughly cooked and top with spoonful of Roquefort and mayonnaise mixture. Let mixture get hot then remove burgers to buns and top with barbequed onions.

Slice potatoes as thinly as you can. Place in a large bowl. Add cream, cheese, fresh thyme, salt and pepper; mix thoroughly. Pour into an oven-proof casserole and bake at 250 degrees for 50- 60 minutes, until lightly browned.
