Pan-seared Salmon

Salt and pepper filets. Heat olive oil in a pan until it just starts to smoke. Carefully place salmon filets skin-side up in pan. Cook about 4 minutes, turn over and cook for 2 minutes more. Remove skin and serve.

Caesar Salad

In a large bowl place oil, lemon juice and garlic, press garlic into bowl with a wooden spoon to distribute. Whisk ingredients together. Cut baguette into 1/4 inch slices, spray with PAM and place in a 350-degree oven for 4 minutes or until gold brown. Tear (don't cut) lettuce leaves into small pieces and place in bowl on top of dressing. When you are ready to serve, toss salad and add romano and toss again and add croutons broken into halves.

Chef Rick tells me he must have anchovies, if your wish, add four anchovy filets to the bowl with the oil, garlic and lemon.

Fresh Tomato Pasta

Cook pasta according to the directions on the box. Heat oil in a pan; add tomatoes, garlic, scallions, olives and capers. Simmer for 8 -10 minutes. Place cooked pasta in pan, stir and simmer for 2 more minutes. Plate and top with shredded basil and romano cheese.

Chopped Italian Salad

Chop all ingredients into bite size pieces. Place in a large bowl. Add olive oil, vinegar, garlic powder and oregano and mix. Add grated romano and mix again. Serve

Quick Garlic Bread

Split bread lengthwise. Brush olive oil on each half. Place on grill or under the broiler, toast until lightly browned. Rub garlic on bread halves.

Honey Mustard Chicken

Put mustard, honey, thyme and 2 oz of court bouillon in sauce pan and warm. Place chicken in oven proof pan, paint top of filets with mixture. Gently add enough court bouillon to pan to cover 2/3 of breasts, be careful not to wash off mixture. Place under broiler until golden brown, remove and place on stove top, add more bouillon to 2/3 level again. Poach slowly until done. Should take a few minutes, depending on the thickness of breasts.

Optional: Reduce pan juices by half, add 1 TB butter and pour over filets.

Scalloped Potatoes

Preheat oven to 350 degrees. Divide butter in half, butter the bottom and sides of an oven-proof baking dish with half the butter. Slice potatoes as thinly as you can. Divide potatoes and nutmeg four parts and cream into three. Layer 1/4th of the potatoes, overlapping, on the bottom of the dish. Sprinkle nutmeg and salt and pepper over the potatoes. Add 1/3rd of the cream. Repeat, finishing with a final layer of potatoes. Sprinkle with nutmeg and salt and pepper. Cover with Panko bread crumbs and cut remaining butter into small pieces and dab on top of breadcrumbs. Cover with aluminum foil and bake for 1 hour, or until potatoes are tender when a knife is inserted. Remove foil and bake for an additional 15 minutes to brown.

Put cubed beef in large casserole dish (No need to brown first) Add peeled and sliced carrots, chopped onions, sliced celery, and peeled and chopped potatoes. Combine salt, pepper, sugar and dry tapioca together and sprinkle over beef and vegetables. Pour V-8 juice over all, cover tightly and bake at 250-300 degrees for 4 hours.



Hint: You may also add a little garlic powder.

Buttermilk Biscuits

Mix together flour, sugar, salt, baking powder, and baking soda. Gradually cut in cold butter with a pastry blender or two knives. When mixture is the consistency of cornmeal, stir in buttermilk. Toss lightly until mixture holds together. Pat out on floured counter and cut into rounds. Bake on ungreased cookie sheet at 375 degrees 18 to 20 minutes, or until lightly browned.

Hint: The secret to light and fluffy biscuits is to handle the dough as little as possible

Fettuccine Alfredo

Beat egg with cream. Melt butter. Pour both over cooked, drained, hot fettuccine, add grated cheese. chop pecans into large chop add along with the cranberries, toss and serve.

Fry bacon until crisp and remove from skillet- set aside. Toast pecan halves in bacon grease over low heat, remove and drain on paper towels.
For dressing: Mix sugar, dry mustard, paprika, celery salt, honey, lemon juice, vinegar, and olive oil in a bowl.

Toss two bags of mixed lettuces or two heads of romaine lettuce with bacon pieces, pecans and drained mandarin oranges. Pour dressing over and toss lightly.
