Pasta with Four Cheeses

Cook pasta in boiling, salted water. Julienne carrots and zucchini. Sauté carrots, zucchini and mushrooms in olive oil. Add remaining ingredients and simmer for 5 minutes. Pour over pasta, sprinkle Romano cheese on top and serve.

French Vinaigrette Salad

Whisk vinegar, shallot and mustard together in a small glass bowl. Slowly drizzle in the oil, whisking constantly. Add salt and pepper to taste. Allow to sit at room temperature for 30 minutes. Toss with mixed lettuce and serve.

Chicken Lickin Good Pork Chops

Mix flour, mustard, salt and garlic powder. Dredge pork chops in flour mixture. Heat oil in pan, brown chops in pan. Place pork chops in Crock Pot. Add the can of soup, cover and cook on low for 6 to 8 hours.

White Rice

Place all ingredients in a microwavable bowl. Mix and cook, covered on high for 15 minutes.

Rub beef roast with salt and pepper. Brown in vegetable oil and Drain. Combine remaining ingredients and pour over roast. Bake at 325 degrees for three hours.

Dad's Mashed Potatoes

Peel potatoes, cook in large pot with salted water to cover until fork tender. Remove, drain and place in large bowl. Cut butter into small pieces. Add butter and sour cream to bowl. Using an electric mixture, mix until all lumps and gone. Salt and pepper to taste.


Note: Never use a food processor for potatoes, as they will turn to glue in the processor

Carrots

Place carrots in a microwavable dish, heat on high for 4 minutes. Stir and heat an additional 3-4 minutes. Add salt and pepper to taste.

Tilapia Tostadas

Toss cabbage, scallions, 4 Tb lime juice, 2 Tb finely chopped cilantro and salt to taste in bowl and set aside.
Mix together mayonnaise, 1/2 of a large avocado, pitted and finely chopped, .5 cup finely chopped cilantro leaves and 1 chopped jalapeno pepper. Set aside.
For fish batter, whisk together flour, salt, and one 12 oz. bottle cold beer. Pour enough oil in large heavy skillet to reach depth of 1/2 inch. Heat oil to 375 degrees. Dip tilapia pieces in beer batter and drop into hot oil. Fry until crisp and golden, about 1 minute per side. Remove to paper towel lined platter to drain excess oil.
Cook corn tortillas in large skillet over medium heat until they are soft, about 20 seconds.
Place 2 tortillas on each serving plate. Top with tilapia fillet, some of the cabbage mixture and a dollop of the avocado sauce. Garnish with lime wedges.

Hint: Good served with black bean, corn salad, and salsa

Grilled Peaches

Peel and halve peaches. Remove pit. Oil all sides, place on hot grill or grill pan cut side down, and cook 5 -6 minutes, until softened.

Greek Chicken Lemono

Cut pocket in chicken breasts; sauté onion, garlic and spinach in a little olive oil in an ovenproof pan, cool. Add feta to spinach and juice of ½ lemon. Stuff chicken breasts with spinach/cheese mixture, use tooth picks to re-seal chicken. Brown chicken in a little olive oil. Squeeze juice of 1 lemon over chicken, sprinkle with oregano. Place in 350-degree oven for 10-15 minutes. Remove pan from oven, remove chicken to plate, deglaze pan with chicken broth and juice of ½ lemon, add pine nuts and salt and pepper to taste, pour over chicken. Serve with lemon wedges to squeeze over chicken.

Rice Pilaf

Melt butter in large skillet or Dutch oven. Add rice and cook, stirring constantly, until rice takes on a golden color. Add chicken broth, minced onions, salt, and pepper. Turn into a 2 or 2.5 qt. baking dish or continue using Dutch oven. Cover and bake in a 425 degree oven for 25 to 30 minutes, or until liquid is absorbed and rice is tender.

Walter Raymond's Sweet and Sour Cucumbers

Cut cucumbers into thin slices. Dissolve sugar in vinegar on low heat. Thinly slice red onion. Add cucumbers, onions and liquid in a bowl and let marinate for 1 hour. Salt and Pepper to taste.
