Insane Meatballs

Mix ground beef, crumbs and dry onion soup together. Shape into balls. Put in large casserole dish. Mix together remaining ingredients and pour over meatballs in casserole dish. Bake at 325 degrees for two hours.

Chop all ingredients into bite size pieces. Place in a large bowl. Add olive oil, vinegar, garlic powder and oregano and mix. Add grated romano and mix again. Serve
Garlic Smashed Potatoes

Cut washed red potatoes into quarters- no need to peel but remove eyes. Cover them with cold water and 1-teaspoon salt in saucepan. Add 2 peeled garlic cloves to the potatoes and water. Boil covered, until tender, about 20 minutes. Drain and return to saucepan. Pour over half and half and melted butter- heat until warm and simmering, being careful not to burn. Mash potato mixture with mixer until smooth and add salt and pepper.

Cook pasta and drain. Place in a large bowl. Add 1 tablespoon, basil, 1/2-teaspoon salt, oregano, and pepper to hot pasta and toss.
Heat remaining oil in large skillet over medium high heat. Add tomatoes and garlic, sauté two minutes. Add chives and thyme, sauté an additional minute or until tomatoes are slightly charred and skins are just beginning to burst. Add broth, bring to a boil. Cook over high heat one minute. Add tomato mixture and parsley to pasta, toss gently to combine. Sprinkle with goat cheese; serve
immediately.

Place chops in a plastic bag and pound until ½ as thick. Mix flour, salt and pepper and cover chops with mixture. Heat oil in a pan, brown chops on both sides and remove to a plate. Add the consommé and white wine. Stir; be sure to get all the brown specs in the bottom of the pan. Mix the cornstarch with 2 Tb spoons of water, add to sauce and cook until thickened. Add the cranberries and add the chops back in to warm. Serve over spaetzle noodles, rice or mashed potatoes.

Bring a large pot of salted water to a boil. Mix the ingredients in a bowl; the dough will be very loose. Place a colander over the boiling water and pour the batter 1/4th at a time in to the colander and press through with a spatula. Allow spaetzle to cook until light and fluffy, a few minutes. Remove to a bowl filled with cold water. Drain spaetzle; heat butter in a frying pan, add spaetzle and toss to heat.

Baked Sweet Potato
