Lettuce Wedge Salad

Prepare one recipe Steakhouse Blue Cheese Dressing. Cut iceberg lettuce into wedges and chill. When ready to serve, spoon dressing over wedges then sprinkle with chopped fresh tomatoes and crumbled blue cheese. Serve with freshly ground black pepper.
Pan-seared Sea Scallops

Note: This recipe takes very little time to make and therefore be sure to have the rest of the meal ready to go before starting the scallops.
Dry scallops thoroughly on a paper towel. Salt and pepper both sides of the scallops. Place Panko breadcrumbs in a shallow dish, salt and pepper breadcrumbs. Dip one side of scallop in breadcrumbs. Place butter and olive oil in pan; heat pan until oil begins to smoke. Place scallops, breadcrumb side down in pan and cook until light brown (about 3 minutes); flip scallops and cook for three minutes on reverse side. Remove scallops to a side plate. Lower heat to medium, place sage leaves and butter in pan and swirl, cooking for three minutes. Plate scallops and drizzle brown butter sauce over scallops, serve with a lemon wedge on the side.

Flame Roasted Asparagus

Cut bottom 1 -1 1/2 inch off of stem. Peel, yes I said peel the asparagus. Place in bowl, add oil and salt and pepper. Toss, retain bowl.
On a very hot grill, place asparagus crosswise to grill. Grill for 3 minutes. Remove and place back in bowl, toss with oil remaining in bowl. With a vegetable peeler shave the romano cheese over the top and serve.
Can be made in grill pan on stove top, cook for 4 minutes.

Place lemon zest and sugar in a bowl, mix together. Cut butter into 15 pieces. Place lemon juice, sugar, butter, and all the eggs into a non-reactive saucepan. Whisk together. Set pan over medium heat and stir until thick and hot to the touch. Remove from heat, strain into bowl and refrigerate for 1/2 hour.
Use pre-baked tart shell ((Recipes/Dessert/Tart Dough), fill with lemon filling. Refrigerate until served.
