French Vinaigrette Salad

0.5cupoil, olive

Whisk vinegar, shallot and mustard together in a small glass bowl. Slowly drizzle in the oil, whisking constantly. Add salt and pepper to taste. Allow to sit at room temperature for 30 minutes. Toss with mixed lettuce and serve.

Combine mustard, garlic and parsley in small bowl. Spread on lamb chops. Brown all sides in very hot oven-proof pan on stove top. Sprinkle bread crumbs on chops, drizzle oil on top of crumbs and place in pre-heated 400 degree oven for 15 - 20 minutes. Internal temperature of 135 for rare.

Mary's Company Potatoes

0.25tsppepper, fresh ground
2cupcream, whipping

6Tbbutter, unsalted
0.25cupalmonds, sliced
 

Peel and boil potatoes, drain. Combine all ingredients except butter and almonds and mash until smooth. Place in a 9 by 13 casserole dish. Pour melted butter over top and sprinkle with almonds. Make at 375 degrees for 30 minutes.

Hint: May be refrigerated and baked the next day - bring to room temperature then bake at 350 for 45 minutes.

Lemon Italian Ice

Place frozen (but softened) lemonade in an ice cream maker, add water and turn on for about 20 minutes until fluffy and white. Serve immediately or re-freeze in a separate container until needed, Thaw sightly before serving, Scape lemon ice with a spoon and layer in a bowl or glass.
