Fresh Tomatoes

2 | Tb | capers |
2 | Tb | onion, red |
2 | Tb | oil, olive |
2 | Tb | lemon, juice of |
1 | pinch | salt and pepper to taste |

Slice tomatoes in 1/4 slices; arrange on plate. Thinly slice red onion and sprinkle on and around tomatoes. Sprinkle capers on and around tomatoes. Pour olive oil on tomatoes. Squeeze the lemon juice on top of tomatoes. Salt and pepper to taste.
Beef Fillets with Jack Daniels Sauce

1 | Tb | peppercorns, black |
2 | each | steak, fillet |
1 | Tb | oil, olive |
2 | oz | bourbon, Jack Daniels |
2 | cloves | garlic, chopped |
4 | medium | mushrooms, sliced |
2 | oz | beef broth |
1 | Tb | butter, salted |
2 | oz | cream, heavy |

Crush peppercorns with pan. Sprinkle on both sides of fillets. Heat ovenproof pan on stove top until hot, place fillets in pan and brown on both sides. Remove pan from stove and place in 350-degree oven for 10-15 minutes. Remove pan from oven, remove fillets to platter, and cover with foil. Slowly place bourbon in pan, off the stove. Watch for flair-ups, place on medium heat on stove, add garlic and mushroom, cook for 3 minutes, and add broth. Cook for two more minutes and add butter and cream, stir, add flillets. Plate and pour sauce over fillets.

3 | cloves | garlic, chopped |

3 | oz | ham, shaved |
1 | pinch | salt and pepper to taste |
0.25 | cup | cheese, Romano, grated |

Wash spinach thoroughly and dry, heat oil in pan, add garlic and onions. Cook until onions are translucent. Add ham and spinach, season with salt and pepper. Plate and sprinkle with romano cheese.

Cream sugar, eggs and
oil.
Mix in flour, baking soda
and powder, cinnamon
and salt. Add grated
carrots, nuts and raisins.
Bake in greased tube pan
or (2) 9 inch cake pans for
40- 50 minutes at 350
degrees.
Cover with cream cheese
