Grilled Swordfish

2 | Tb | oil, olive |
1 | pinch | salt and pepper to taste |
4 | medium | swordfish, steaks |
Brush olive oil on both sides of steak, salt and pepper to taste. Grill on a hot grill or grill pan for 3-4
minutes per side.
Serve with lemon wedges.
Flame Roasted Asparagus

1.5 | lb | asparagus |
1 | oz | cheese, Romano |
2 | Tb | oil, olive |
0.5 | tsp | salt and pepper to taste |
Cut bottom 1 -1 1/2 inch off of stem. Peel, yes I said peel the asparagus. Place in bowl, add oil and salt and pepper. Toss, retain bowl.
On a very hot grill, place asparagus crosswise to grill. Grill for 3 minutes. Remove and place back in bowl, toss with oil remaining in bowl. With a vegetable peeler shave the Romano cheese over the top and serve.
Can be made in grill pan on stove top, cook for 4 minutes.

Brenda's Favorite Lemon Tart

1 | cup | sugar, white |
12 | Tb | butter, unsalted |
0.5 | cup | lemon, juice of |
4 | large | eggs |
1 | large | egg, yolks |
2 | Tb | lemon zest |
1 | recipe | Tart Dough |
Place lemon zest and sugar in a bowl, mix together. Cut butter into 12 pieces. Place lemon juice, sugar, butter, and all the eggs into a non-reactive sauce pan. Whisk together. Set pan over medium heat and stir until thick and hot to the touch. Remove from heat, strain into bowl and refrigerate for 1/2 hour.
Use pre-baked tart shell, fill with lemon filling. Refrigerate until served.
