Grilled Swordfish

Brush olive oil on both sides of steak, salt and pepper to taste. Grill on a hot grill or grill pan for 3-4 minutes per side.

Serve with lemon wedges.

Flame Roasted Asparagus

1ozcheese, Romano
2Tboil, olive
0.5tspsalt and pepper to taste
 

Cut bottom 1 -1 1/2 inch off of stem. Peel, yes I said peel the asparagus. Place in bowl, add oil and salt and pepper. Toss, retain bowl.

On a very hot grill, place asparagus crosswise to grill. Grill for 3 minutes. Remove and place back in bowl, toss with oil remaining in bowl. With a vegetable peeler shave the Romano cheese over the top and serve.

Can be made in grill pan on stove top, cook for 4 minutes.

Brenda's Favorite Lemon Tart

12Tbbutter, unsalted
0.5cuplemon, juice of
4largeeggs
1largeegg, yolks
2Tblemon zest

Place lemon zest and sugar in a bowl, mix together. Cut butter into 12 pieces. Place lemon juice, sugar, butter, and all the eggs into a non-reactive sauce pan. Whisk together. Set pan over medium heat and stir until thick and hot to the touch. Remove from heat, strain into bowl and refrigerate for 1/2 hour.

Use pre-baked tart shell, fill with lemon filling. Refrigerate until served.
